Company Summary

The Sugar Beet Co-op ("The Co-op") will provide access to local food through a member-owned, full service grocery store as well as offer positive programming and community-building opportunities. The current food options in the defined trade area only offer limited local food, often at a high premium. The Co-op will work directly with farmers when possible for local produce at competitive prices, providing a wide selection.

    Founder

    Cheryl enjoys exploring every aspect of food, from seed to plate. From tending her Victory Garden with her kids to experimenting with home brewing and preserving, she is always looking for her next food adventure. With professional experience in art, teaching, event planning, wine retail and restaurant management, she brings a broad range of skills to her work with The Sugar Beet Co-op.

  • Jenny Jocks Stelzer
    Founder

    Jenny is an indefatigable lover of local food, sustainability, and community. Her family has been gardeners, CSA members and ardent farmers' market devotees since she first read the work of Michael Pollan, Bill McKibben, and Barbara Kingsolver on the environment, food, and community. She gardens, cooks, cans, eats, and shares food with her family, friends, and neighbors in Oak Park.

    Tom has a passion for cooking and sustainability. His professional background is in the commercial real estate industry. He also serves on the Board of Directors of Seven Generations Ahead, an Oak Park based non-profit with the broad mission of making communities more sustainable, and the Board of EarthShare Illinois, a leading environmental and conservation non-profit that focuses on reducing the impact of global warming.

    Judy is currently leading The Co-Op's Capital and Membership Committee using her marketing and strategy background. As principal of Strategy Scene, she provides marketing and business strategies while keeping an eye on the big picture, always seeking the best solutions.

  • Greg Marsey
    Core Committee Member

    Greg is a former Village Trustee for the Village of Oak Park (2005-2009) and serves as a key member of The Co-Op's Core Committee. His understanding of Village process and experience as a business owner in the food industry makes him a valuable asset to our team.

  • Peter Nolan
    Core Committee Member

    Peter is currently the Chief Brand Officer for Roti Mediterranean Grill in Chicago. His background in marketing for Roti, Potbelly's, Ben & Jerry's and other food related groups has proven beneficial to The Co-op on many levels as we look to start a new brand and market our store to a large audience.

  • Lisa Boone
    Core Committee Member

    Lisa was born and raised on a farm where a half-acre garden was the main source of sustenance for a large extended family and surrounding neighbors. She has spent the past 25 years working in social services and community organizing with over 12 years as Founder and Executive Director of Geneva Foundation, a transitional living program for teenage boys who have been victims of abuse and neglect.

    Core Committee Member

    Chris' background in finance and accounting has been a key asset to The Co-op. He currently works at Magnetar Capital in Evanston as a Fund Accountant. His previously worked at Harris Bank and GolinHarris. His passion for food and The Co-op matches his passion for numbers.

  • Dan Beach
    Core Committee Member

    Dan is current the Chair and Professor of Psychology at Dominican University. He has previously served on multiple area Boards, including the Board of Dominican University. Dan's background, community connections and interest in the local food supply make him a great asset to The Co-op.

  • Maureen Spain
    Core Committee Member

    Maureen's interest in local food developed after living in several farm-to-fork loving urban communities around the country. Now, back in her hometown of Chicago, The Co-op combines all of her passions – community development, sustainability, education and food – into one project. Her background in marketing and business development has proven to be extremely helpful to The Co-op.

    Core Committee Member

    Brian is the Principal and owner of Hammersley Architecture. Brian's architectural, programming and project management skills are intragal to the success of The Co-op. In addition, Brian's enthusiasm for The Co-op's concept and his thought leadership beyond just the brick's and mortar have proven extremely useful.
