Bakery specializing in artisanal breads and traditional baked goods; Butchery with an old fashion, community oriented style, but also specializing in delicacies such as salumi & charcuterie; Restaurant serving locally sourced seasonal products through eclectic cuisine. All pieces will function independently, but gain through the leveraging of resources, personnel, and ingredients. Primarily servicing the community in which we are located.

    Executive Chef / Butcher

    Mr. Day is a chef as well as butcher who has worked in the kitchen for 10+ years after receiving his culinary degree. He has worked at a diverse array of restaurants, as well as a restaurant turnaround consultancy. He has been an integral part of 5 successful restaurant openings in his career. He specializes in cured meats, as well as Asian and French cuisines. He is currently working as a butcher at the renowned Fatted Calf in Napa, CA.

  • Rose Kelly
    Executive Pastry Chef / Baker

    Ms. Kelly is a pastry chef and baker, classically trained in French cuisine, and a recipient of the Grand Diplome from Le Cordon Bleu in Paris, France. She has worked in a variety of restaurants, in many different capacities. Most recently she is a part of the pastry team for L’Artusi and Dell’Anima restaurants in Manhattan’s West Village.

  • Benjamin Kanner
    Restaurant Group Manager

    Mr. Kanner began his career in Finance, working for many years at Deutsche Bank Alternative Investments. He has returned to Columbia Business School to pursue his MBA, with the goal of turning his financial prowess and business acumen towards the culinary industry.
