SweetZean is the trade name of protein expressed in maize germ. SweetZean is heat stable under a variety of conditions used in food processing and can be used everywhere sucrose is used. Due to its intense sweetness, smaller amounts of SweetZean is used for equivalent sweetening power, lowering caloric value while maintaining nutritive properties. This purified protein is natural and cost-competitive to sucrose.
