    Phil has 16 years’ experience within the Seafood Industry and has extensive experience
    in both the domestic wholesale and retail trade. Phil has also spent time working for one of the country’s largest prawn exporters as a sales agent.

    From 2004 to 2007 Phil owned and operated a successful Seafood Wholesale business that serviced restaurants and retail fish markets with fresh and frozen seafood. The business was very well known on the Gold

    Operational Director

    Dean has been in the Hospitality Industry since 1986. Dean started his career as an
    apprentice Chef and also achieved London City of Guilds qualified part I, II and three in 1990.

    Over the following years Dean was Executive Chef in Hotel chains and resorts
    internationally and moved to Australia in 1992. Living in Toowoomba Queensland he
    commenced an eight year employment role at SQIT Toowoomba, as a Hospitality
    Teacher. He taught chef
