She was the general manager of a Waffle House in Mobile, Alabama and was responsible for creating the schedule, the paying, hiring and firing of employees, ordering supplies, recruiting, cooking, running a 29.5% food cost and a 19.9 % payroll cost, and being on call 24/7 including all holidays. Before being handed a restaurant, there was an intensive, 12 week, manager training program that had to be gone through.
