Tom & Linda Verhey have more than 35 years of experience in the bar industry in Chicago, Illinois. The couple are the original founders of Pops for Champagne (est. 1982) and were the sole proprietors for 25 years. Their vision, creativity and loyalty to their business and guests are what enable Pops for Champagne to thrive in Chicago and expand within the city and beyond.

Sara has been an integral member of Pops' River North re-location and operation. She created and executed all opening operations of the business, including hiring of staff, creation of HR policies and practices, implementation of financial practices and reporting and overall system structure of the operation. Her diligence to the bottom line and operation is what has allowed for Pops for Champagne to be in a position to expand.

In his 10th year with Pops, he has unrivaled passion for all things bubbly and has created a beverage program that is unmatched in the world. He not only spends countless hours studying and learning all there is to know about Champagne, Sparkling wine and the various houses (many of them quite obscure), he also meticulously trains the staff to know just as much as he does, successfully translating that knowledge into sales.
