Company Summary

We will produce a raw milk Stilton type cheese There is only one other producer of this cheese and they are at maximum capacity.There is huge demand for this product in the UK artisan cheese market &also in export to the US.Wholesalers such as Neals Yard Dairy will be our main customers,but we will also sell direct at award winning Belfast food market,St Georges,and online. Finally we will work along side restaurants throughout Northern Ireland.

    Michael is the driving force behind this venture.

    After several years at Arcadia Deli he left to learn the science and craft of artisan cheesemaking.

    Studying at the School of Artisan Food, Michael built a strong relationship with Neals Yard Dairy and gained experience from some of the countries best cheesemakers.

    From here he gained employment with Leicestershire Handmade Cheese and managed the make of 3 raw milk award winning cheese.
