Company Summary

We are a casual Italian Cafe and Bakery as well as including a full service restaurant and bar to cater to the needs of the consumers and tourists along the North Michigan Avenue Corridor. All inclusive it will seat 320 people. The customer base is 19-60 years of age and both men and women. We serve locally grown as well as free range raised food products, cheeses and work with many local food producers. We can sustain many food sources.

    Rich is the founder and past owner of Labriola Bakery in Alsip Il. It is the leading Artesan bread company in the entire Chicago market. Rich grew the company from a small market bakery to a 40 million dollar a year high end bakery while maintaining the quality of production and services that got him to that level. Rich also founded Labriola Cafe and Bakery which serves the Western Suburbs of Chicago and the surrounding communities.

    Vice President

    John was instrumental in the development of the Portillo restaurant chain from 5 units to 43 during his 30 years of leadership. John managed over 3000 employees as well as 185 million in sales and growth. John was also responsible for the start up and growth of the Sonic franchises in the Chicago market changing corporate kitchen design and introduction of new product development on a national level.
