Company Summary

IronLeaf is a sustainable restaurant concept with the belief that top quality food takes a long time to create and a short time to bring to consumers. The menu focuses around an extensive cheese/charcuterie program with accompaniments of fresh local meat and produce to create small plates, snacks, and house-made accoutrements. Coupled with a focused beverage program we will add to the quality of dining in Chicago's River West neighborhood.

    I have a long history of restaurant experience in all types of hospitality environments including Michelin star dining, hotel, bar, and corporate franchises. Having managed and worked all positions, my level of understanding and familiarity with operation systems and needs is extensive. I have been a part of many successes and failures, and with that have learned the nuances and details that keep clientele returning regularly.
