Dr. John Yuen Jr. is a leading researcher at the Tufts University Center for Cellular Agriculture (TUCCA). As a New Harvest Fellow, he pioneered methods for producing cultivated fat tissue and developing 3D tissue culture strategies. His expertise lies in bioprocess design and tissue engineering, specifically creating the complex textures and flavors necessary to replicate conventional meat products at scale.
