We will produce a range of authentic, ethical North American smallgoods for distribution through a wholesale network and retail delicatessen. We have found there is a niche market for wholesale pastramis, smoked briskets, streaky bacon and interesting charcuterie while running two successful Sydney restaurants.

We would aim to source all of our products from grass-fed and pastured farms and one day take the company fully biodynamic.
