Freezing is more profitable two way: Frozen product does not spoil therefore boats can be larger staying out until full and use public cold storage if they they don't like the dock price. Fish frozen pre-rigor (within an hour of death) taste and, more importantly, look better than later-frozen dock processor fish and therefore our products has a special, high-end sushi and fine dining market.
